John C. Shields, 78, born in Denver, Colorado and lately of Napanoch, NY, peacefully passed away early Monday, March 31, after a brief illness. He was the beloved husband of Eva Shields, and loving father of John C. Shields, Jr. and Victoria Shields. An artist by nature, John used his talents for over 4o years as Head Salad Chef at Catskill resorts such as the Homowack Hotel, the Tamarack Lodge, the Raleigh Hotel, and as salad chef at the Nevele Hotel at the close of his career. He was most noted for creating art through fruit and carved ice pieces in the era of cocktail parties, and for various occasions and events. He was admired for his signature salad dressings, famous deviled eggs, and various salads, of which recipes were held very close. “Johnny” was highly respected for his talent, skills and dedication, and was one of the greats from the Golden age of the Catskill resorts. Born in Denver, Colorado, John was the last surviving sibling of 11 children of Elmer and Gertrude Davis Shields. He came to the East Coast in 1960 and landed in New York City, which, very different than his country upbringing, eventually lead him to the Catskills to apprentice under John Cook at the Homowack Hotel. It was also at the Homowack, that John met his future wife, Eva Wynkoop, at a milk machine. They were married six months later, and all said it wouldn’t last. In 2013, they celebrated 52 years of marriage. They had two children, John C. Shields, Jr., also of Napanoch, and Victoria Shields, who resides in the Washington DC region. Visitation will take place at Louck’s Funeral Home at 79 North Main Street, Ellenville, NY, on Sunday, April 6 from 6-9pm. On Monday, April 7, a service will be held at 10am, led by Pastor Peter Rustico, also at Louck’s Funeral Home. Burial will follow at Fantinekill Cemetery. Contributions may be made in John’s memory, to a charity of one’s own choosing.
